Puro Slow Burger is located in Pavia, in the heart of the old city center, just a few steps from the Fraschini Theater and Visconteo Castle. Our burger restaurant flanks the University of Pavia and the three medieval towers, and in good weather, offers outside dining, on a small terrace on top of the old walls of the Aula Scarpa.

The courage to dare with little

Puro Slow burger is a small size establishment furnished with refurbished materials, such as tiles, stone, glass, wood, hay, and textiles, but craftily transformed by the hands of local artisans. Our staff is young and passionate, and what we serve is the result of everybody's creativity and participation, sometimes more than a bit daring.

A lot more than just hamburgers

Instead of a hamburger, why not try one of our tartars (meat or fish) or even our "White Burgers" served with 250 grams of Puglia buffalo mozzarella from Putigliano in lieu of the bun. There is also always a wide selection of rich and tasty salads and, for a sweet finish, our selection of home-made desserts is delightful.

The genesis of a real italian burger restaurant

Puro Slow Burger is a burger restaurant where, in contrast to Fast Food philosophy, hamburgers have become an icon to taste. Christian Sartorio, a lover of literature and Jazz music, driven by a passion for simple food, developed the concept of "Italian Quality Food", in 2014 with Fabrizio Tassara, as a culinary voyage through three restaurants: Puro, Verdesalvia, and Latteria.

From the butcher to the fishmonger passing through the vegetable garden

Ingredients that are fresh, seasonal, and meet the Slow Food presidio are a staple of all our burgers. The meat selection ranges from Fassona (heifer) to Scottona to domestic white meats to a Blend of Chianina and Cinta Senese. Puro Slow Burger is the first Italian burger restaurant to offer hamburgers of seared, escalloped, or baked fish with a daily vegetable coal baked bun, while vegetarian hamburgers are served with fresh pumpkin bread or fresh baby spinach.
